农产品品质对于提升其市场竞争力至关重要,因此其品质的快速检测存在一定的必要性。拉曼光谱作为一种无损检测技术,其在农产品品质鉴定中应用广泛。本文主要从拉曼光谱技术的类型、优势及其在粮食作物品质鉴定和果蔬无损检测方面的应用进行综述。该技术通过分析与入射光频率不同的散射光谱,获取分子振动、转动等信息;其包含傅里叶变换拉曼光谱分析、显微共聚焦拉曼光谱分析和共振拉曼光谱分析等,具有检测速度快、无损和无污染等优点。粮食作物品质鉴定方面,该技术能快速准确地检测农作物的成熟度、新鲜度和病害,以及农作物中物质成分的含量和分布等。果蔬无损检测方面,研究主要集中于外部品质检测,如对苹果早期轻微损伤的鉴定,采用拉曼光谱结合化学计量方法,经过光谱预处理及有效算法校正后,能实现高准确率的损伤检测。本文为促进拉曼光谱技术在农产品品质鉴定方面的应用提供参考。

The quality of agricultural product is very important to enhance market competitiveness, so it is necessary to quickly detect their quality. As a non-destructive testing technology, Raman spectroscopy is widely used in the quality identification of agricultural products. The types, advantages and applications of Raman spectroscopy in quality identification of food crop quality identification and non-destructive testing of fruit and vegetable were reviewed. By analyzing scattering spectra with different frequencies of incident light, information such as molecular vibration and rotation can be obtained. It included Fourier transform Raman spectroscopy, microconfocal Raman spectroscopy and resonance Raman spectroscopy, and had the advantages of fast detection, non-destructive and pollution-free. In terms of food crops quality identification, the technology can quickly and accurately detect the maturity, freshness and disease of crops, as well as the content and distribution of material components in crops. In terms of non-destructive testing of fruit and vegetable, the research mainly focused on external quality testing, such as identification of early minor damage of apples, using Raman spectroscopy combined with stoichiometric methods, after spectral pre-processing and effective algorithm correction, high accuracy of damage detection can be achieved. This paper provides a reference for promoting the application of Raman spectroscopy in agricultural product quality identification.
